Roasted Pepper and Artichoke Panini

Ingredients:

Directions:

  1. Heat oil in skillet on medium heat.
  2. Add onion, cook until translucent, 3-5 minutes.
  3. Add garlic to pan, cook for 2 additional minutes.
  4. Reduce heat to low, add red peppers, artichokes, spinach, and herbs. Cook until just warm. Remove from heat.
  5. Place 1/3 cup pepper mixture on one half of wrap.
  6. Top with 1 tablespoon feta and 2 tablespoons parmesana.
  7. Fold in half.
  8. Spray with oil and place on grill untill browned and warm.
  9. Remove from heat.
  10. Open and add cherry tomatoes and sprinkle with salt.
