Mom's Applesauce Oatmeal Muffins

Ingredients:

  • 1 1/2 cups oatmeal
  • 1 1/4 cups flour
  • 1 tsp cinnamon
  • 3/4 tsp baking soda
  • 1 cup applesauce
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1 egg
  • 1/4 cup oatmeal
  • 1 tsp cinnamon (i usually add more -- )
  • 1 tbsp butter or 1 tbsp margarine, melted

Directions:

  1. Preheat oven to 400.
  2. Line muffin pan with liners and a quick spritz of cooking spray on the bottom of each.
  3. Mix together oatmeal, flour, cinnamon, baking powder in baking soda.
  4. Add the applesauce, milk, brown sugar, vegetable oil and egg.
  5. Fill muffin liners 2/3 full with batter.
  6. In a separte bowl, mix topping ingredients together, sprinkle about a spoonful over muffin.
  7. Bake for 20-22 minutes
  8. *** Sometimes I double the Streusel Topping***.
