Ingredients:

  • 1 1/4 cups flour
  • 3/4 tsp baking soda
  • 1/3 cup applesauce
  • 1/3 cup firmly packed light brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup raisins

Directions:

  1. MIX flour, cereal, pumpkin pie spice and baking soda; set aside.
  2. BEAT applesauce and sugars in large bowl with electric mixer on medium speed until well blended.
  3. Add egg and vanilla; mix well.
  4. Add flour mixture; beat on low speed until well blended.
  5. Stir in carrots and raisins; let stand 10 minutes.
  6. DROP rounded teaspoonfuls of dough, 2 inches apart, onto parchment paper-covered or nonstick baking sheets.
  7. BAKE at 350°F for 10-12 minutes or until golden brown.
  8. Cool on wire racks.
