Low-Fat, Sugar Free Tapioca Pudding

Ingredients:

  • 2 1/2 cups skim milk
  • 1 1/2 cups agave syrup
  • 1/2 cup tapioca
  • 2 1/2 cups cold water

Directions:

  1. Soak tapioca over night in 2 1/2 cups cold water.
  2. Drain tapioca and place in crock pot with milk and cook on high for 2 hours.
  3. Mix yolks and agave.
  4. Temper and add into crock
  5. Cook for 15 more.
