Light and Crispy Waffles

Ingredients:

  • 3/4 tsp salt
  • 2 tbsp sugar
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil

Directions:

  1. Lightly spray waffle iron, and preheat.
  2. Stir together flour, baking powder, salt, and sugar.
  3. Beat egg whites until stiff (I usually use a whisk until they're fluffy).
  4. In another medium bowl, beat yolks; add milk and oil and gently stir to combine.
  5. Add yolk mixture to dry ingredients, blending well.
  6. Fold in the egg whites.
  7. Bake 1/3 - 1/2 cup batter for each waffle, depending on the size of the waffle iron.
  8. Serve hot (wonderful with strawberries and pure maple syrup).
