Ingredients:

  • 1 cup lentils
  • 1 clove garlic
  • 1 tbsp olive oil
  • 16 oz chickpeas
  • 8 oz tomatoes
  • 1/2 cup red onion
  • 16 oz spinach
  • 1/4 cup mint

Directions:

  1. Cook lentils.
  2. Mix everything in a bowl.
