Ingredients:

Directions:

  1. Columbo Powder:
  2. Brown the rice for 3 min over med head in a skillet. Transfer to a cool bowl.
  3. Add remaining spices to skillet and brown for 3 minutes until fragrant. Transfer to bowl with rice.
  4. Combine rice and spices in blender or spice grinder and grind down to a fine powder.
  5. Makes enough for 6-8 lbs of meat, poultry or seafood.

  7. The Stew:
  8. Season lamb with salt & pepper and brown in oil in a dutch oven. (I also marinate and brown it with a little bit of onion cooking wine).
  9. Remove lamb after browning, add a bit more oil to pan and add onions, chives, garlic and ginger.
  10. Cook aprox. 3 minutes till veggies are soft, but not brown.
  11. Stir in Colombo Powder and cook for 1 more minute.
  12. Return lamb to pan with veggies.
  13. Add stock, tomato paste and thyme.
  14. Bring to a boil then reduce heat to simmer uncovered for 1 hour.
  15. Add potatoes and squash and cook for 30 more minutes (till tender).
  16. Just prior to serving, add lime juice and sprinkle with cilantro.
  17. Serve and enjoy.
  18. Also: try not to spill the stew on any clothing - the tumeric leaves stubborn stains!
