Ingredients:

  • 3 eggs
  • 1/8 cup chopped ham
  • 1/8 cup chopped onion
  • 1/8 cup bell or sweet peppers (optional)

Directions:

  1. Coat a non-stick pan with Canola oil spray and heat it at 40% of max (just below Medium on the stove)
  2. While the pan heats, start the beating with some eggs until they just start to become frothy.
  3. Heat the pan until a drop of water sizzles in it.
  4. Add the beaten eggs.
  5. Start stirring the eggs around when they begin to firm.
  6. Add all the ingredients but the cheese.
  7. Continue mixing up the omelet until most of the eggs have almost no liquid remaining.
  8. Push all of it together so that it sticks together
  9. Top with cheese and serve
