Ingredients:

  • 3 1/2 cups milk, divided
  • 2 eggs
  • 1/4 cup dark molasses
  • 1 tsp salt
  • 3/4 tsp ground ginger
  • 2 tblsp butter or margarine, melted

Directions:

  1. Heat 3 of the cups of milk in the top of a double boiler. Mix the 1/2
  2. Cup of the milk with the cornmeal and stir into the warm milk. Cook over
  3. Gently boiling water for 30 mins stirring occasionally. Beat eggs
  4. Slightly in a 1 1/2 quart baking dish; add the syrup, molasses, salt,
  5. Spices and butter. Gradually stir into the hot cornmeal mixture. Place
  6. Dish in pan of hot water, and bake at 350 degrees F for 1 hr or until
  7. Firm in center. Makes 8 servings
