Ingredients:

Directions:

  1. Split the squash in half and scoop out the seeds. Finely chop the garlic and add one half to each squash half. Add one tsp olive oil to each squash half. Cover with foil and bake at 375 until tender (about an hour). This step can be done a day ahead of time.
  2. Slice thinly the apple and sausage. Julienne the green pepper and onion.
  3. Heat the grapesed oil (canola can be subsituted) in a deep saute pan. Add the sausage, apple, onion, and green pepper.
  4. While the pan is sauteing, peel and dice the squash. Add squash to the saute pan.
  5. Remove from heat when apples are tender but not mushy.
