Guacamole For 2 (but We Really Like Guacamole....s...

Ingredients:

  • 1 large or two medium or smaller cloves of garlic
  • 1 lime
  • 1/2 lemon
  • 1 diced tomato (medium to large - make sure it is ripe)
  • salt to taste
  • diced jalapeno (optional)

Directions:

  1. Scoop and mash two of the avocados into a bowl
  2. Smash and mince the garlic cloves and add to the bowl
  3. Cut lime in half and squeeze juice into the bowl; with a spoon scoop lime pulp into the bowl
  4. With a fork smash bowl ingredients together
  5. Add tomato, onion, and pinch or so of medium grind sea salt, mix to blend (don't pulverize)
  6. Squeeze juice from half lemon and remaining lime into bowl,mix to blend
  7. Scoop remaining avocado into bowl and chop into the mix with a fork
  8. Add peppers if desired
  9. Chill if desired and enjoy
