Ingredients:

  • 1/3 cup olive oil
  • 1/2 tsp salt
  • 2 cups rolled oats
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350. Grease Cookie sheet. Mash banas. Add dates and oil; mix with a fork. Add remaining ingredients and let stand a few minutes for oats to absorb moisture. Drop by teaspoonful on cookie sheet. Bake 25 minutes or until nicely browned. Cool before removing from cookie sheet.
  2. Variation: Add cinnamon, nutmeg or allspice.
