Banana Buttermilk Custard

Ingredients:

  • 1 large banana
  • 1 1/2 cups heavy cream
  • 1/2 cup buttermilk
  • 3/4 cup sugar
  • 2 tsp vanilla

Directions:

  1. Preheat oven to 325.
  2. Peel the banana and cut lengthwise, then crosswise into half-slices.
  3. Spray cooking spray inside a 1 1/2 quart souffle dish and line bottom with banana slices.
  4. Heat cream and buttermilk in saucepan or in top of double boiler until hot. Add sugar, stirring until it dissolves.
  5. Beat yolks thoroughly with vanilla. Spoon a few tablespoons of the hot cream mixture into egg yolk mixture, whisking thoroughly.
  6. Slowly pour in remainder of cream mixture, stirring continually.
  7. Pour combined cream and egg yolk mixture over bananas. Place souffle dish inside a larger pot, filling larger pot with water halfway up the side of souffle dish.
  8. Place in oven and bake for 1 hour to 1 hour and 15 minutes.
