Fried Polenta Cheese Fritters

Ingredients:

Directions:

  1. Lighlty oil 8x8x2 baking pan.
  2. Whisk cornmeal, flour, sguar and salt in bowl.
  3. Bring buttermilk and 1 cup water to boil in large saucepan
  4. Over medium-high heat.
  5. Gradually whisk in dry ingredients.
  6. Reduce heat to medium-low.
  7. Simmer until very thick, whisking constantly,
  8. About 2 minutes.
  9. Remove from heat.
  10. Mix in cheese.
  11. Transfer batter to prepared pan.
  12. Press to even layer.
  13. Chill until cold.
  14. Cut fritter batter into 3 strips.
  15. Cut each strip crosswise into 8 rectangles.
  16. Turn rectangles out of pan onto work surface.
  17. Heat oil in medium skillet over medium-high heat.
  18. Working in batches, add fritters to skillet and saute until golden brown, about 5 minutes perside.
  19. Transfer fritters to paper towels to drain.
  20. Arrange fritters on platter.
  21. Sprinkle with parsley and serve hot.
