Puerto Rican Cheese Fritters

Ingredients:

  • 2 eggs
  • 1 cup milk
  • 2 tbsp sugar
  • 2 cups flour
  • 1 1/2 tsp salt
  • oil (for deep frying)

Directions:

  1. Beat the eggs, milk and sugar together in a large bowl.
  2. Sift the flour, baking powder and salt into another bowl.
  3. Mix the flour into the egg mixture just enough to moisten all the ingredients and bring the batter together. Do not overmix.
  4. Fold in the cheese.
  5. Heat oil for deep frying to 350-365°.
  6. Drop spoonfuls of the batter into the hot oil and fry until golden brown.
  7. Remove to a plate lined with paper towels and repeat with the rest of the batter.
