Elegant Egg Roll Up

Ingredients:

Directions:

  1. In mixing bowl combine yolks, pepper and salt then beat well.
  2. Beat in flour until smooth.
  3. In separate bowl beat egg whites until stiff then fold into egg yolk mixture.
  4. With nonstick cooking spray grease bottom of jelly roll pan.
  5. Line with wax parchment paper then grease again.
  6. Pour egg mixture into pan and spread to 1/2 thickness to edges.
  7. Bake in preheated 350 oven for 8 minutes.
  8. Immediately invert onto clean sheet of wax paper.
  9. Remove pan and peel off paper.
  10. Spray skillet with cooking spray then add vegetables and cook until crisp tender.
  11. Season with salt and pepper.
  12. Gently heat milk and spoon 3/4 cup over egg layer.
  13. Sprinkle 1/4 cup cheese and vegetables over milk.
  14. Starting with long side roll jelly roll style keeping filling inside.
  15. Place roll in a shallow baking pan with seam down.
  16. Drizzle remaining milk over and around vegetable roll.
  17. Sprinkle remaining cheese over roll and bake in preheated 375 oven for 10 minutes.
  18. Garnish with chopped parsley and serve.
  19. For a spicier dish top roll with salsa.
