Easy Bean Tomato Soup

Ingredients:

Directions:

  1. Rinse beans, place in saucepan with 3 cups veg.stock/water
  2. Add minced garlic and salt, bring to a boil and simmer for 15 mins
  3. Add tomato paste, fill empty paste can with water and add that too
  4. Add chopped up basil(save some for garnish too if u want)
  5. Add diced tomatoes and olive oil, simmer until thick, about 15 mins, meanwhile cook pasta according to package
  6. Drain pasta, toss into large bowl with a bit of olive oil. (keep and store separately from the soup)
  7. Ladel noodles, then soup. garnish with cheese, red pepper flakes, and basil
