Cheesy Sausage and Egg Enchiladas

Ingredients:

Directions:

  1. In skillet over medium heat, crumble and brown sausage.
  2. Drain, reserving 2 tablespoons drippings.
  3. Return sausage and drippings to skillet.
  4. Add beaten eggs; scramble until desired doneness.
  5. Add 1/2 cup salsa and 1 cup of cheese.
  6. Stir until well blended.
  7. Spread 1 cup of salsa in a 13 x 9-inch pan.
  8. Place 1/4 cup of meat mixture down the center of each tortilla; roll up.
  9. Place tortilla seam side down on salsa.
  10. Top with remaining salsa and cheese.
  11. Bake at 350F for 20 minutes or until thoroughly heated.
