Ingredients:

Directions:

  1. Place spinach, onion, garlic, pepper, oil in crock pot.
  2. Cook on high for 1 hour.
  3. Stir in tomatoes and salsa.
  4. Cook additional 2 hours with lid off.
  5. Place cooked spinach on tortilla.
  6. Roll tortilla and place in pyrex dish sprayed with Pam.
  7. Cook for 1/2 hour on 350.
  8. Cover with cheese.
  9. Cook additional 1/2 on 350.
