Ingredients:

Directions:

  1. In a big bowl, whip the cream until it forms soft peaks, then fold in the yogurt.
  2. Peel and mash the bananas on a plate with a fork; then work in the lemon juice.
  3. Fold the bananas and maple syrup into the cream mixture.
  4. Place six 3/4 cup ramekins or custard cups on a small tray and divide the banana cream mixture between them.
  5. Smooth the surface of each one, then chill until ready to eat.
  6. Just before serving, sprinkle the brown sugar over the tops of the desserts and caramelize with a blowtorch.
  7. Leave for a minute or two to harden, then serve.
