Arugula and Tomato Salad

Ingredients:

  • 4 cups coarsley chopped arugula or 4 cups spinach
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 pinch pepper

Directions:

  1. In salad bowl toss arugula or spinach with tomatoes.
  2. In small bowl whisk together the olive oil, red onion, red wine vinegar, balsamic vinegar, salt and pepper.
  3. Pour over salad and toss to coat.
