Ingredients:

Directions:

  1. Preheat broiler.
  2. In blender combine whole eggs, egg whites, beans, green onions, salt and hot pepper sauce.
  3. Process until smooth then heat oil in medium skillet until hot but not smoking.
  4. Add zucchini and cook 5 minutes then add mint, basil, peas and vinegar and cook 1 minute.
  5. Reduce heat to low then add egg mixture to skillet and cover then cook 8 minutes.
  6. Place skillet under broiler 3” from heat and cook 5 minutes.
  7. Sprinkle parmesan over frittata and broil until cheese is golden then cut into wedges and serve.
