ZUCCHINI AND GREEN PEA FRITTATA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Herrin Estate in Canton,
Ingredients:

2 whole eggs
5 egg whites
1 cup canned cannelloni beans rinsed and drained
2 green onions chopped
3/4 teaspoon salt
1/4 teaspoon hot pepper sauce
2 teaspoons olive oil
2 zucchini quartered lengthwise and thinly sliced
2 tablespoons chopped fresh mint
1/2 teaspoon dried basil
1 1/2 cups frozen peas
1 tablespoon balsamic vinegar
3 tablespoons grated parmesan cheese
Directions:
1. Preheat broiler.
2. In blender combine whole eggs, egg whites, beans, green onions, salt and hot pepper sauce.
3. Process until smooth then heat oil in medium skillet until hot but not smoking.
4. Add zucchini and cook 5 minutes then add mint, basil, peas and vinegar and cook 1 minute.
5. Reduce heat to low then add egg mixture to skillet and cover then cook 8 minutes.
6. Place skillet under broiler 3” from heat and cook 5 minutes.
7. Sprinkle parmesan over frittata and broil until cheese is golden then cut into wedges and serve.
