Vegan Oaty Pancakes or Waffles (Healthy)

Ingredients:

  • 3/4 cup whole wheat flour (i used whole spelt flour)
  • 1/4 cup flour
  • 1/8 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tbsp sugar
  • 1/4 cup muesli
  • 1/4 cup oats

Directions:

  1. In a big bowl combine flours, salt, baking powder, cinnamon, nutmeg, sugar, oats and muesli.
  2. In a second bowl combine vanilla soy milk and extract. Add this to the dry ingredients and stir to combine. If youre planning on making pancakes, you might want to add a tad more milk to make the dough more liquid.
  3. Allow dough to rest for about 10 minutes to give the baking powder time to start working (this will make for lighter pancakes/waffles).
  4. Preheat and oil waffle iron or frying pan/griddle and once they are hot, bake out waffles or pancakes.
  5. For a pancakes use about 1/4 cup of batter and flip it once bubbles rise to the top of the dough. Cook until golden.
  6. Enjoy.
