Turkey Breasts With Mozzarella and Tomatoes

Ingredients:

Directions:

  1. Melt 2 tablespoons of butter in a large frying pan. Add turkey and fry until golden brown on both sides.
  2. Season with salt and pepper.
  3. Place turkey slices in a shallow baking dish in 1 layer and cover each with a slice of mozzarella cheese and some of the chopped tomatoes.
  4. Dot with remaining butter and bake in a 375 degree oven for 20 minutes or until tomatoes are cooked and cheese has melted.
  5. Before serving sprinkle with fresh chopped parsley.
