Ingredients:

  • cheese cloth or empty teabag / tea ball
  • 2 oz. glass noodles
  • 5 cups water
  • 1 clove garlic microplaned
  • 1 tbsp fresh ginger microplaned
  • 1 lime
  • 2 stalks lemongrass cut into 1 inch peices
  • sambal olek

Directions:

  1. Soak the glass noodles in cold water until softened about 10 minutes.
  2. Put the lemongrass and the lime leaves into a teabag or tea ball. these are used for flavor and not eating.
  3. While soaking the noodles add a tablespoon or two of vegetable oil to the bottom of a pot over medium heat.
  4. Add the shallots and ginger to the pot and cook three minutes.
  5. Now add the garlic, stir, then the water, mushrooms, and noodles cooking about five minutes.
  6. Squeeze the lime juice in and remove the tea bag or ball the leaves and lemongrass are in. you can toss these.
  7. Now you'll season the soup to taste with the soy, and sambal olek. when serving garnish with cilantro leaves.
