Tex Mex Burgers; Guacamole

Ingredients:

Directions:

  1. Combine the ground beef with the onion, bell pepper and garlic in a bowl.
  2. Add plenty of salt and pepper.
  3. Mix well, then divide the mixture into four portions.
  4. Carefully shape each portion into a patty, using dampened hands or a burger press.
  5. Cover with a cloth and set aside while you make the guacamole.
  6. Scoop the avocado flesh into a bowl and mash with a fork, then mix in the garlic, tomatoes, lime juice, chili and cilantro.
  7. Add salt and pepper, to taste.
  8. Cover the surface of the guacamole with plastic wrap, leaving no air between plastic wrap and guacamole.
  9. Brush the burgers lightly with oil.
  10. Grill on a medium-hot barbecue for 8-10 minutes, or until cooked through.
  11. Turn the burgers once during cooking.
  12. Just before serving, heat the tortillas on the barbecue for about 15 seconds on each side.
  13. Place a spoonful of guacamole and a burger on each tortilla, then fold the tortilla over.
  14. Garnish with chopped cilantro and serve plain or with lettuce.
