Summer Squash Chutney

Ingredients:

  • 3 medium onions
  • 2 cups sugar
  • 1 tbsp salt
  • 1 pinch cayenne
  • 1/2 tsp ground cloves
  • 1 1/2 cups mix dried fruit
  • 2 1/2 cups malt vinegar

Directions:

  1. Peel and core the squash and apples.
  2. Chop the squash and apples with the tomatoes and onions.
  3. Put this mixture into a saucepan with the remaining ingredients.
  4. Cook over a low heat, stirring constantly, until the sugar is dissolved.
  5. Bring to a boil. Reduce heat and simmer for 2 hours, stirring occasionally.
  6. Pour into warm sterilized jars and seal.
