Ingredients:

Directions:

  1. Bring enough salted water to cover the potatoes to a boil, in medium saucepan.
  2. Place potatoes in boiling water and reduce heat to low.
  3. Cover and cook until tender, around 15 minutes.
  4. Do not overcook.
  5. Remove the potatoes and cool.
  6. Just before serving, cut each potato in half and scoop out a portion in the center.
  7. I usually slice a thin slice off the bottom to make them sit flat, but this is up to you.
  8. Place a dallop of sour cream in the centers.
  9. Top with cheese, bacon, and chives.
