Ingredients:

Directions:

  1. Bring enough salted water to cover the potatoes to a boil in a medium size saucepan.
  2. Place the potatoes in the boiling water; reduce the temperature to low.
  3. Cover and cook until tender, about 15 minutes. Do not overcook.
  4. Remove the potatoes and cool.
  5. Cut each potato in half and carefully scoop out a portion of the center with a small spoon or melon baller. (You can take a very thin slice of potato off the bottom so that it will sit flat.).
  6. Place a small dollop of sour cream in the center.
  7. Top with a pinch of cheese, bacon and chives.
  8. Makes 24 appetizers.
  9. Stuffing Variation:.
  10. Combine 1/2 cup smoked salmon, 1/4 cup sour cream, 2 tablespoons minced red onion, 1 teaspoon capers, drained, and 1/2 teaspoon prepared horseradish.
