New Potato or Red Potato Salad ala Nita

Ingredients:

Directions:

  1. Scrub potatoes under running water with a brush.
  2. Leave skins on potatoes.
  3. Place them in a pot of water to cover the potatoes.
  4. Bring to a boil and boil for 12 to 15 minutes until potatoes are fork tender.
  5. Remove from pot to stop cooking process.
  6. Let potatoes cool slightly.
  7. Place them in a large bowl and break them apart somewhat with a cooking fork or spoon.
  8. In another bowl, combine rest of the ingredients.
  9. Mix them in with the potatoes gently.
  10. Taste and adjust seasonings.
  11. Serve warm or, cover and refrigerate for later use.
  12. Do NOT leave at room temperature.
  13. *Available in the Spice department of most supermarkets.
  14. Ask for it.
