Ingredients:

  • 200 g dates
  • 1 cup water
  • 1/4 cup golden syrup
  • 1 tsp bi-carb
  • 1/4 tsp ground cloves
  • 1/2 tsp mixed spice
  • 2 tsp finely grated ginger
  • 60 g butter
  • 2/3 cup caster sugar
  • 2 eggs
  • 2/3 cup brown sugar
  • 80 g butter

Directions:

  1. Place dates, water, ginger and golden syrup in a saucepan and bring to the boil. Reduce heat and cook for 1 minute. Remove from the heat and puree until smooth. Stir through bi-carb. Leave to cool.
  2. Place butter and sugar into a large mixing bowl and beat until light and fluffy. Add the egg, one at a time, beating well after each addition. Fold in the flour, spices and date mixture.
  3. Pour into a 20cm square cake tin lined with baking paper and bake in a moderate oven (170-190C) for 45 minutes or until a skewer comes out clean.
  4. Sauce: Place all ingredients into a small saucepan and bring to the boil. Serve pudding with sauce and cream or ice-cream if desired.
