Ingredients:

  • 1 1/4 cups water
  • 1 tsp bi-carb soda
  • 1/3 cup caster sugar
  • 2 eggggs
  • for the sauce
  • 1 cup cream

Directions:

  1. Preheat oven to 180C and line a 20cm round cake tin.
  2. In a small saucepan, combine dates and water, bring to the boil. Remove heat and add bi-carb. Allow to cool.
  3. In a large bowl, use electric beaters to combine butter and sugar, then the eggs, one at a time.
  4. Fold in the self-raising flour, then the dates.
  5. Put batter in the cake tin and bake for 55 minutes.
  6. While the puddin's doing its thing, make the sauce; Just combine all the sauce ingridients in a medium saucepan till its all smooth and melted together.
  7. When the Pudding's 55 minutes is up, pour 1/4 cup of the sauce over the top and bake for another 5 minutes.
  8. Serve with icecream and more sauce.
