Spring Pea Soup

Ingredients:

  • 3 cups peas
  • 2 tbsp fresh mint or 2 tbsp basil
  • 2 cups chicken or 2 cups vegetable broth

Directions:

  1. In blender combine all ingredients; puree until smooth.
  2. Transfer puree to saucepan. Warm over medium heat until heated through, but not boiling.
