Sour Cream-cheese Potato Casserole

Ingredients:

  • 1 cup sour cream
  • 1/4 cup (1/2 stick) butter
  • 1 tsp. salt

Directions:

  1. Boil unpeeled potatoes until cooked through, cool.
  2. Grate potatoes (skin and all) coarsely and place in a large casserole being careful not to mash or compress them.
  3. Put butter and cheese in a small heavy sauce pan over VERY LOW heat, and melt the cheese.
  4. Add the sour cream and green onions.
  5. Salt the potatoes.
  6. Pour cheese mixture over the potatoes and toss LIGHTLY.
  7. Bake at 350 degrees for 20 minutes, just until hot and cheese is melted.
  8. Serve.
