Smoky Oven-Baked Potato Chips

Ingredients:

  • 2 large russet potatoes (about 1 1/2 lb)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp salt

Directions:

  1. Slice potatoes into 1/8-inch-thick rounds. Pat dry on layers of paper towels. Toss potato slices with olive oil, paprika, 1/2 teaspoon salt, and pepper in a large bowl; arrange in a single layer on baking sheets. Bake at 400° until browned and potato edges lift slightly from baking sheets (20-25 minutes). Remove from oven; sprinkle with 1/4 teaspoon salt. Cool completely and store in an airtight container for up to 1 day.
