Directions:

  1. Prepare Marinade:
  2. Combine marinade ingredients in mixing bowl until sugar is dissolved.
  3. Marinade shrimp in non-reactive container (or zip-loc) 30 min-1 hr prior.
  4. Soak wooden skewers in water 1 hr prior (helps from burning).
  5. PREPARATION:
  6. Remove shrimp from marinade, and skewer 5 shrimp per skewer
  7. Baste shrimp lightly with olive oil (allows rub to stick to shrimp)
  8. Using your fingers, lightly sprinkle shrimp with rub on both sides.
  9. Don’t over do it so it looks like breading, or it will dominate the flavor. Basically dust the shrimp light to med.
  10. COOKING
  11. Grill over med-high heat only 1 1/2 - 2 minutes per side turning once.
  12. Remember your not cooking them because they’re already cooked. Your just heating them up and adding a bit of color to them. Overcooked shrimp get rubbery & dry.
  13. ** cook raw shrimp 2 min per side or until tails are bright pink
