  1. If you plan to add meat, get it cooked or cut up if using leftovers.
  2. Put the Rice on to cook.
  3. Once everything has been chopped up that needs chopping, saute the fresh vegetables till just starting to lightly brown. Remember to be careful with when you add your garlic. Over cooking garlic causes a bitter taste!
  4. Add the tomatoes, beans, Ortega Chiles and corn, stir everything together gently.
  5. Add your spices and herbs, mix them in and cover on a low to medium heat for about five minutes.
  6. Add your meat if you plan to use meat this time now. Continue cooking for another five minutes or until hot all the way though.
  7. Serve over cooked rice.
  8. The amount given for this recipe serves at least 3 people, but you can see that added to the amounts can easily feed as many as you have need to. I've cooked this for a group of 30 as a side dish. The Beans and Rice provide protein, but you could also saute firm Tofu if you wanted to add that, instead of meat. (I would add some Chiopolte sauce to the Tofu, if that was what I wanted instead of meat. This is so easy to play with, I'm sure you'll have some great ideas to crack the flavor whip on this one too. It's also good with homemade Cornbread!
