  1. Cut pork loin so that you can roll veggies and cheese inside. Thaw and throughly drain spinach, cook mushrooms in microwave 2 mins. Mix feta, Spinach, and mushrooms together, then spread on pork. Roll pork and bind with toothpicks or bakers string. Brown all sides in a skillet then cook in oven at 350 until 165 degrees, about 1 hour
