Kung Pao Pork in Fried Rice

Ingredients:

  • 1 lbs pork loin
  • 1 1/4 cup. broccoli
  • 1 1/4 cup. sugar snap peas
  • 1/2 cup. mushrooms
  • 1/2 cup. peppers
  • 1/2 cup. onion
  • 1/2 cup cooked rice
  • 2 eggs
  • 2 tsp sugar
  • 1 tsp curry
  • 4 tbsp soy sauce

Directions:

  1. Boil rice.
  2. After rice is done allow liqid to be soaked up by the rice.
  3. Add 2 eggs scrambled.
  4. Add oriental curry powder and other spices to taste.
  5. Add frozen oriental veggies.
  6. Cover and heat, stirring often to keep from sticking.
  7. Marinade pork in vinegar, sugar, seasoning salt,cracked pepper, soy sauce and garlic powder.
  8. Place pork mixture in a hot skillet that has been sprayed with non stick spray and brown until done.
  9. Mix in peanuts and allow to soften. Deglaze pan with some vegetable broth and pour over pork.
  10. Plate over rice or mix together and enjoy.
  11. 1 Serving is 1/4 the pot. Possibly about 2 cups.
