Roasted Sweet Potato Fries

Ingredients:

  • 2 medium sweet potatoes
  • 2 to 3 tbsp olive oil
  • coarse salt and pepper to taste
  • or
  • 1/4 tsp cinnamon
  • dash of nut meg

Directions:

  1. Preheat oven to 450 F.
  2. Do not peel the sweet potatoes, scrub and slice into 10 thick wedges each.
  3. Place the olive oil and potato wedges in a zip lock plastic bag.
  4. Shake to coat well.
  5. Arrange wedges on an oiled baking sheet making sure they do not touch.
  6. Bake 25 minutes, turn and bake another 15 minutes or until they are golden brown and crisp.
  7. Sprinkle with coarse salt and pepper to taste.
  8. -or-
  9. Toss in another zip lock bag with the brown sugar and spices, my preferance....
  10. If You use the brown sugar try taking an1/8 cup butter and adding again the sugar mixture, mixing it well and use it as a dipping sauce.
