Roasted Red Potatoes

Ingredients:

  • 6 -8 medium small red potatoes
  • 1 tsp olive oil
  • 1 tsp italian seasoning

Directions:

  1. Preheat oven to 375 degrees.
  2. Spray 13x9 dish with cooking spray.
  3. Slice potatoes fairly thin and place in dish.
  4. Drizzle with olive oil.
  5. Toss to coat.
  6. Sprinkle Italian seasoning and Parmesan cheese on top.
  7. Bake for 45 minutes or until golden brown.
