Ricotta and Ham Stuffed Chicken

Ingredients:

Directions:

  1. In a small bowl combine both cheeses, basil and garlic.
  2. Rinse chicken and pat dry. Cut a slit along the thick edge of the breast, forming a pocket. Open breasts and lay one slice of ham in each.
  3. Spoon 1/4 of ricotta mixture into each breast on top of the ham. Close and fasten with toothpicks.
  4. Season with salt and pepper. Bredge chicken through flour on both sides until well coated.
  5. War, oil and butter in a skillet. Heat until butter melts. Add chicken. Cook 5 minutes then flip. Cook an additional 5 minutes, until chicken is no longer pink.
