Red Pepper Corn Muffins

Ingredients:

  • 1/3 cup finely chopped sweet red pepper
  • 1 cup flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/4 cups buttermilk

Directions:

  1. Preheat oven to 400 degrees.
  2. Generously butter muffin tin - 12 muffin regular size.
  3. Whisk together cornmeal, flour, baking powder, baking soda and salt in a large mixing bowl.
  4. Whisk together eggs, buttermilk and melted butter in a medium bowl.
  5. Add buttermilk mixture and red peppers to the flour mixture and stir until just combined; do not overmix.
  6. Place about 1/3 cup mixture into each of 12 muffin cups.
  7. Bake for 12 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
  8. Carefully remove muffins from tin to a wire rack to cool.
