Ingredients:

  • 1 1/2 cups flour , all purpose
  • 1/2 tsp salt
  • 1 egg
  • 3/4 cup sugar
  • 1 1/2 cups bananas, mashed (3 or 4)

Directions:

  1. Preheat oven to 375F.
  2. Combine flour, baking powder, baking soda and salt in bowl.
  3. Beat together egg, sugar, butter, and mashed bananas in another bowl.
  4. Add to dry ingredients, and stir until just moistened.
  5. Fill greased muffin cups three quarters full.
