Rainbow Bean Soup in a Jar

Ingredients:

Directions:

  1. Look for red lentils or yellow split peas for a real rainbow of colors in this mix, if you can't find use regular brown lentils or pick a colorful dried bean of your choice for this layer.
  2. Mix seasonings and place in a thin zipper sandwich bag.
  3. Use a Pint Jar that has a wide mouth.
  4. Place each type of bean in jar in order listed above.
  5. Top with season bag, gently flatten bag so it can be seen from all sides.
  6. Put lid on jar.
  7. Decorate jar.
  8. Attach recipe to jar.
  9. Put a expiration date on year from now.
  10. RAINBOW BEAN SOUP.
  11. Remove seasoning packet.
  12. Set aside.
  13. Rinse beans place beans in large microwave safe dish.
  14. Cover with water 1 to 2 over top of beans.
  15. Cover dish loosely with plastic wrap.
  16. Microwave on high for 15 minutes, rotating after 7 minutes.
  17. Drain and rinse beans very well.
  18. Place beans in very large pan.
  19. Add 4 cups water and 1/2 can crushed tomatoes and seasonings from packet.
  20. Cover, bring to boil.
  21. Lower heat, cover pan and simmer 1 1/2 hours or until beans are tender.
  22. STIR OCCASIONALLY.
  23. Enjoy!
