Quick Cucumber Salad

Ingredients:

  • 2 large cucumbers
  • 1/2 cup white vinegar or apple cider vinegar (it's better
  • 1/4 cup sugar
  • 1/4 tsp salt ( just a shake or two if you don'tsp want to measure)
  • 1/4 tsp pepper (same applies here)
  • 1 tbsp canola oil
  • 1 tbsp lemon juice (optional)
  • 1 tbsp dill

Directions:

  1. Peel and Cut cucumbers into bite-sized pieces and put into bowl
  2. Mix vinegar, lemon juice and sugar until sugar is dissolved
  3. Pour over cucumbers
  4. Add the salt, pepper, dill and oil
  5. Gently mix together
  6. Chill until served!
