Pumpkin Chip Muffins

Ingredients:

  • 2 eggs
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp clove
  • 1/4 tsp allspice

Directions:

  1. Preheat oven to 350°.
  2. Grease or line muffin tin.
  3. Combine dry ingredients and set aside.
  4. In large bowl, beat eggs.
  5. Stir in pumpkin and melted butter.
  6. Blend well.
  7. Add dry ingredients, stirring until just moistened, Stir in chocolate chips.
  8. Spoon into muffin tin and bake about 20-24 minute.
  9. I could not find the original recipe in my files, but found similar ones, and they all called for baking powder, so after the review, I edited the recipe and added the baking powder.
