Sweet Potato Pudding

Ingredients:

  • 1 2/3 cups flour
  • 1 1/3 cups sugar
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp clove
  • 1/2 cup butter
  • 1/3 cup water
  • 1 large egg

Directions:

  1. Sift all dry ingredients together in mixing bowl.
  2. Mash the potato and add to the bowl with butter and water.
  3. With an electric mixer, beat the mixture 2 minutes.
  4. Add the egg and beat another 2 minutes.
  5. Place batter in a greased 8 square cake pan.
  6. Bake at 350 for 40 minutes.
