Country Pumpkin Applesauce Muffins

Ingredients:

  • country pumpkin applesauce muffins
  • 2/3 cup solid vegetable shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 2/3 cup apple juice
  • 3 1/3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1/2 tsp mace (optional)
  • 1 cup finely chopped walnuts

Directions:

  1. Preheat the oven to 350 degrees.
  2. Grease the cups of muffin tins.
  3. Cream together the shortening and sugar.
  4. Add the eggs one at a time.
  5. Stir in the applesauce and pumpkin until well mixed.
  6. Next add the apple juice, flour, baking soda, and baking powder. Don’t over mix.
  7. When just smooth, add the salt, nutmeg, cinnamon, and mace.
  8. Stir in the walnuts.
  9. Pour into the prepared muffin tins.
  10. Bake for 20 minutes, until a toothpick inserted in the center
  11. Comes out clean.
